Rinse the spare ribs with salted water to eliminate any unpleasant odors or tastes, ensuring the meat is clean. Afterward, transfer the ribs to a bowl and marinate them with two tablespoons of seasoning powder and two tablespoons of cooking oil, mixing well.

Remove any yellowing leaves and roots from the coriander and scallions, then rinse and chop them into approximately 1-cm pieces. Peel and rinse the shallots, then slice them thinly. Wash the tomatoes and cut them into wedges. Peel and core the pineapple, then rinse and slice it into thin pieces of about 0.5 cm thickness.

Step 2: Cook the sour pineapple and spare rib soup

Pour 500ml of water into a pot and place it on the stove. Add the marinated spare ribs to the pot. Once the water boils, skim off the foam to clarify the broth. Reduce the heat and simmer the ribs for about 10 minutes.

In a separate pan, heat up 200ml of oil. Add the sliced shallots and scallion roots, stirring continuously. After two minutes, add the pineapple and tomatoes, and continue stirring for another two minutes before turning off the heat. Transfer this mixture into the pot with the spare ribs, stirring to combine. Wait for the broth to boil again, then season with one tablespoon of salt, two tablespoons each of sugar and seasoning powder, and one tablespoon of fish sauce. Turn off the heat and add the chopped scallions and coriander to the pot.
