1. Ingredients for Tofu with Minced Meat Sauce

  • Soft tofu: 1 tray
  • Pork shoulder: 150 grams
  • Sate or chili paste: 1 tablespoon
  • Garlic: 3 cloves
  • Dried chili (or mild chili powder): 1 piece
  • Cornstarch: 1 tablespoon
  • Ginger
  • Scallions
  • Seasonings: Annatto oil, salt, ½ tablespoon seasoning powder, cooking oil, 1 tablespoon soy sauce

2. How to Make Tofu with Minced Meat Sauce

Step 1: Prepare the Ingredients

  1. Clean and mince or grind the pork shoulder.
  2. Cut the soft tofu into bite-sized pieces. Bring a pot of water to a boil and blanch the tofu for 1 minute.
  3. In a bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir until dissolved.
  4. Peel and mince the garlic.
  5. Peel and finely chop the ginger.
  6. Clean and deseed the dried chili, then mince it.
  7. Remove any wilted or damaged scallion leaves, wash the rest, and chop them finely.

Step 2: Stir-fry the Minced Meat

  1. Heat oil in a pan and add the minced meat. Cook until the meat changes color, then add the garlic, dried chili, and ginger.
  2. Next, add 1 tablespoon of sate or chili paste, a few drops of annatto oil, and some water to the pan.

Step 3: Add Tofu to the Meat Sauce

  1. Once the mixture in the pan starts to boil, gently add the tofu and stir a few times.
  2. Season with salt, seasoning powder, and soy sauce to taste.
  3. Pour in the cornstarch mixture and cook until the sauce thickens. Then, add the chopped scallions and stir gently for a few minutes until the tofu is coated in the sauce. Cook for another 5 minutes to allow the tofu to absorb the flavors, then turn off the heat.
