Ingredients:
1 liter of unsweetened fresh milk
1/2 can of condensed milk (adjustable to your desired sweetness)
1 box of yogurt (at room temperature)
10g of gelatin (or you can substitute with agar powder, but this will make the yogurt firmer)
Instructions:
Step 1: Prepare the Gelatin
Mix 10g of gelatin with 2-3 tablespoons of warm water in a small bowl until the gelatin is completely dissolved. If you’re using agar powder, follow a similar process but gently heat the mixture to dissolve the agar.
Let the gelatin mixture rest for about 10 minutes to achieve the best setting.
Step 2: Prepare the Milk Mixture
In a pot, combine 1 liter of fresh milk and 1/2 can of condensed milk. Stir well and heat over low heat until the mixture reaches a temperature of 40-50°C (avoid boiling).
Once the mixture is warm enough, add the dissolved gelatin and stir until the gelatin is completely dissolved.
Step 3: Add the Yogurt Starter
Wait for the milk mixture to cool down to 30-40°C, then add the box of yogurt. Gently stir to combine. Avoid adding the yogurt starter when the mixture is too hot, as high temperatures can kill the bacteria, affecting the fermentation process.
Step 4: Incubate the Yogurt
Pour the yogurt mixture into glass jars or small molds, and cover tightly.
Place the jars in a rice cooker, oven (only for keeping warm, not for cooking), or wrap a heating pad around the pot.
Incubate the yogurt for 6-8 hours at a warm temperature until it sets and develops a mild aroma.
Step 5: Achieve the Desired Texture and Store
After incubation, place the yogurt in the refrigerator for 2-3 hours before serving.
Serve the soft yogurt with fresh fruits, honey, or fruit sauces for an enhanced flavor experience.
Gelatin is the key to achieving a soft and smooth texture. Feel free to adjust the sweetness and the amount of gelatin to your taste. Ensure proper hygiene during the process to prevent the yogurt from becoming slimy or lumpy. Good luck, and enjoy your homemade soft yogurt!
