The Art of Frying Delicious Eggs
Step 1: To eliminate any egginess, especially if they’re not fresh, use 1/4 teaspoon of rice wine or mirin for a nicer aroma. Wine is also the secret to making the eggs fluffier.
Step 2: Adding a teaspoon of warm water will keep the eggs moist and prevent them from shrinking during frying. Wash and finely chop the green onions.
Step 3: Now, crack the eggs into a bowl, add the chopped green onions, and season with fish sauce, salt, pepper, and seasoning powder. Lightly beat the mixture until well combined.
Step 4: Heat a pan over medium heat, then add a little oil and swirl to coat. Use a ladle to scoop portions of the egg mixture and pour them into the pan, frying over low heat.
Step 5: When the eggs turn a golden hue and start to set, use a spatula or a thin wooden spoon to gently lift the edges and roll them over.
Step 6: After each batch, use a paper towel or a silicone brush to apply a thin layer of oil to the pan before adding more eggs. Repeat this process until all the eggs are cooked. Use a sharp knife to cut the eggs into bite-sized pieces and arrange them on a plate.
Step 7: The final product should be golden, glossy, and fluffy, with a delightful aroma of green onions. This dish is suitable for all ages, especially children.
Notes:
For smoother eggs, strain the mixture through a fine-mesh sieve. If you prefer a fluffier texture, use a whisk to beat the eggs.
A touch of rice wine not only eliminates any unpleasant odor but also makes the eggs fluffier. Adding a bit of warm water keeps them moist and prevents shrinkage.
Frying the eggs over low heat ensures they cook through gently. Avoid high heat, which can dry out the eggs.
Feel free to experiment with additional ingredients like diced sausage, tomatoes, or minced meat for a heartier dish.
