Usually, people rinse fresh mushrooms with water before cooking. However, this method doesn’t effectively remove all the dirt and insect eggs that may be present.

First, prepare a bowl. Mix two spoons of salt, three spoons of flour, and water in the bowl. Then, soak the mushrooms in this mixture for 15-20 minutes.
Salt helps to kill insects and bacteria, while flour, when mixed with water, forms a sticky substance that attracts and removes dirt and insect eggs.
Place a plate on top of the mushrooms to ensure they are fully submerged in the water.
After about 20 minutes, remove the mushrooms. You will notice a significant amount of residue settled at the bottom of the bowl.
After soaking, rinse the mushrooms in warm water several times. The warm water will help to further clean and enhance the aroma of the shiitake mushrooms.
Let the mushrooms air dry, and they are ready to be cooked.
How to prolong the freshness of fresh mushrooms
If you want to store mushrooms for later use, try the following methods.
– Wash the mushrooms, cut off the stems, and blanch them in boiling water for about 2 minutes. Then, soak them in a bowl of cold water to cool them down. Once cooled, drain the water and place the mushrooms in a container. Cover and store in the refrigerator. This method will keep the mushrooms fresh for 2-4 days.
– Instead of washing the mushrooms with water, use a damp cloth to wipe them clean. Arrange the mushrooms in a clean cloth and wrap them tightly. Store the wrapped mushrooms in a cool, dry place. This way, they will retain their freshness for up to 7 days.
