Step 1: Prepare the ingredients

Soak the pork belly in diluted salt water, then rinse it off with cold water and pat it dry. Cut the meat into bite-sized cubes, making sure each piece has a good amount of fat and lean meat.

In a separate pot, boil the quail eggs for about 15 minutes over medium heat, then peel them.

Peel and finely chop the shallots and garlic. Carefully wash and finely chop the scallions.

Rinse the chili, remove the seeds, and chop it finely.

Step 2: Marinate the pork

In a bowl, mix 3 tablespoons of seasoning powder, 2 tablespoons of fish sauce, 2 tablespoons of sugar, 2 tablespoons of cooking oil, and 1 tablespoon of pepper. Add the pork cubes and coat them evenly with the marinade. Let it sit for about an hour to absorb the flavors.

Step 3: Make the caramel sauce

Heat a pan over high heat and add 3 tablespoons of sugar. Cook until the sugar turns into a deep brown caramel, then carefully add just enough water and bring it to a boil. Keep stirring to prevent burning and adjust the heat if needed. Once the caramel sauce thickens, remove it from the heat.

Step 4: Braise the pork with coconut water

In a separate pan, heat some cooking oil and sauté the chopped garlic and shallots until fragrant. Add the marinated pork and cook until the meat is browned and slightly crisped. Toss in the chili, coconut water, and caramel sauce.

Gently place the peeled quail eggs into the braising liquid, making sure they are just submerged. Add a dash of fish sauce and let it simmer for about 30 minutes.

Step 5: Finish and serve

Dish out the braised pork belly and eggs onto a serving plate. Garnish with chopped scallions if desired. This dish is best served hot. The pork belly should be tender and juicy, with a beautiful brown color and a rich, savory taste.
