Should you use cold or hot rice for frying?

Cold rice is the optimal choice for frying as the grains have evaporated moisture and are drier, resulting in less clumping when fried. If you don’t have cold rice, spread hot rice on a wide plate or tray, and use a fan to cool it down quickly or place it in the fridge for 15 minutes.

Additionally, for the best results, opt for regular rice instead of sticky rice.

Control the heat when frying rice

Remember to turn up the heat when frying rice. This ensures even cooking and keeps the rice warm throughout.

Divide the eggs into two portions

First portion: Use one egg yolk. Beat the yolk and mix it thoroughly with cold rice. The lecithin and viscosity of the egg will coat each grain. Then, add this mixture to a pan with scallion oil (oil that has been infused with the flavor of scallions), and stir-fry quickly. The egg will give the rice a beautiful golden color.

This is also the perfect time to season your rice. Add salt and black pepper to taste, and stir to combine. Note that you should only add seasonings when the rice and egg mixture is dry.

Second portion: Use one whole egg, beaten. Push the fried rice to one side of the pan and pour the beaten egg into the empty space. Stir the egg until it sets, and then mix it with the fried rice. This technique ensures you get a good distribution of egg and that delicious, nutty egg flavor.

Stir the rice thoroughly, maintaining high heat to ensure the rice grains are firm and glossy. Finally, add a dash of soy sauce to taste, and stir to combine. The aroma of soy sauce will instantly fill the air, and it will also give the rice a subtle color change. If you’re not a fan of soy sauce, try using fish sauce for a delicious, aromatic alternative.

Once the rice has absorbed all the flavors, turn off the heat, plate your dish, and enjoy! The fried rice should have a delightful crunch, a nutty aroma, and a flavor that’s sure to please.

Good luck, and happy frying!
