Step 1: Prepare the filling

Soak the cellophane noodles, wood ear mushrooms, and oyster mushrooms in warm water for 15-20 minutes until softened. Then, rinse, drain, and finely chop them.

In a large bowl, mix together the minced pork, chopped shrimp, noodles, mushrooms, carrot, onion, bean sprouts, and scallions.

Crack the egg into the mixture, and add 1 teaspoon each of salt, pepper, MSG, and fish sauce. Mix well to combine all the ingredients.

Taste the filling by frying a small amount in a pan to check the seasoning, and adjust if necessary.

Step 2: Wrap the spring rolls

Lay a spring roll wrapper on a clean surface, with the rough side facing up.

Place about 1-2 teaspoons of the filling in the corner of the wrapper, shaping it into a small rectangle.

Fold in the sides and then tightly roll it up from the bottom, ensuring the spring roll is securely wrapped but not too tight to avoid tearing during frying.

Repeat until all the filling is used. Place the spring rolls on a tray and cover with a damp cloth to keep them from drying out.

Heat oil in a deep pan or small pot to a depth that will completely submerge the spring rolls.

Test the oil’s temperature by dropping in a small piece of wrapper; if it sizzles and floats to the top immediately, the oil is ready.

Fry the spring rolls over medium heat, without overcrowding the pan, to maintain the oil temperature.

Fry for about 5-7 minutes, turning them occasionally, until they are golden brown. When they are ready, remove them from the oil and drain on paper towels.
