How to Make Delicious Spring Rolls at Home
Step 1: Prepare the filling
Soak the cellophane noodles, wood ear mushrooms, and oyster mushrooms in warm water for 15-20 minutes until softened. Then, rinse, drain, and finely chop them.
In a large bowl, mix together the minced pork, chopped shrimp, noodles, mushrooms, carrot, onion, bean sprouts, and scallions.
Crack the egg into the mixture, and add 1 teaspoon each of salt, pepper, MSG, and fish sauce. Mix well to combine all the ingredients.

Test the oil’s temperature by dropping in a small piece of wrapper; if it sizzles and floats to the top immediately, the oil is ready.
Fry the spring rolls over medium heat, without overcrowding the pan, to maintain the oil temperature.
Fry for about 5-7 minutes, turning them occasionally, until they are golden brown. When they are ready, remove them from the oil and drain on paper towels.

Combine 2 tablespoons of sugar with 3 tablespoons of water and 2 tablespoons of fish sauce. Add 1 tablespoon of lime juice, 1 teaspoon of chopped garlic, and 1 teaspoon of chopped chili (adjust to taste).
Stir well and taste, adjusting the flavors to create a harmonious sweet, sour, and salty sauce.
Step 5: Serve
Arrange the spring rolls on a plate and serve with fresh herbs (lettuce, coriander, basil) and the prepared dipping sauce.
