– 1 duck weighing about 3kg; Shallots, ginger, lemon, chili, garlic; Half a bottle of white wine; Fish sauce, seasoning powder.

Instructions:

– Peel and grill the shallots and ginger until fragrant, then crush them.

Is the duck you’re choosing at the right age? Opt for ducks that are around 3-4 months old, plump, with round breasts, thick neck and belly skin. A distinctive feature is that the tips of their wings should just about cross each other.

Are the duck’s feathers mature or immature? Choose ducks with larger feather tubes and no new feathers. This makes plucking easier.

Avoid young ducks, as they tend to have softer meat that is more difficult to pluck. Younger ducks have larger, softer beaks, while older ducks have smaller, harder beaks. Additionally, male ducks are generally preferred over females.

Tips for eliminating the foul odor of duck:

Duck often has a distinct odor, but proper handling can eliminate it. The crop, a gland located above the duck’s stomach, is the primary source of this odor.

After eviscerating the duck, be sure to remove the crop as well. If you wish to keep it, you must at least remove the yellow gland within the crop, as this is the source of the foul odor. 

To neutralize any remaining odor, rub the duck with salt and then rub it with half a lemon. Rinse the duck thoroughly and let it air dry before cooking. Alternatively, you can use crushed ginger or white wine to rub the duck and then rinse it off. 

For whiter meat, soak the duck in cold water for about 20 minutes after plucking and cleaning it.
