Ingredients:
– 300g water spinach (tender tips), 10g minced garlic, 5g cooking wine, salt to taste, seasoning powder, lard, and water as needed.

Instructions:
For stir-frying garlic, it’s best to use the tender tips of the water spinach for a fresher taste. In Vietnam, the tender tips are usually around 5-7cm long, but in some parts of China, they can grow longer.
Soak the water spinach tips in a basin of water with a teaspoon of salt for about 10 minutes, then rinse them under running water.
Heat up a sufficient amount of lard in a wok until it starts to smoke. Add the minced garlic to the wok and stir-fry until fragrant, about 3 seconds. Immediately add the water spinach and stir-fry over high heat for about half a minute, until the leaves are almost cooked. If the wok becomes too dry, you can sprinkle a little hot water along the edges.
Add the cooking wine, salt, and seasoning powder to the wok and continue stir-frying over high heat for another half minute before serving.
