Ingredients for Black Bean Dessert
Black beans: 300g
Rock sugar or white sugar: 200-250g (adjust to taste)
Water: 1.5-2 liters
Salt: 1/4 teaspoon
Ginger: 1 small knob (about 10g)
Pandan leaves (optional): 2-3 leaves
Coconut milk (optional): 100ml

Cooking Instructions for Black Bean Dessert
1. Preparing the black beans
Rinse the black beans with cold water 2-3 times to remove any dirt.
Soak the beans in warm water (around 40-50°C) for 2-4 hours (or overnight if you have the time). Tip: Add 1/2 teaspoon of salt to the soaking water to soften the beans faster.
After soaking, drain and rinse the beans once more.
2. Cooking the beans using a pressure cooker (to save time)
Place the beans in a pressure cooker and add 1.5 liters of water.
Close the lid and cook at high pressure for 15-20 minutes (depending on your cooker). If using a regular pot, simmer for 45-60 minutes over medium heat, stirring occasionally to prevent burning.
Once cooked, release the pressure (if using a pressure cooker) and check if the beans are tender. They should be soft and slightly buttery, but not mushy.
3. Making the dessert
Transfer the cooked beans to a regular pot (if using a pressure cooker). Add sugar and 1/4 teaspoon of salt, stirring well.
Simmer over low heat for 10-15 minutes to infuse the beans with the sugar. For extra aroma, add pandan leaves (washed and tied together) or sliced ginger to the pot while cooking.
Taste and adjust the sweetness to your preference.
4. Final touches and serving
Turn off the heat and ladle the dessert into serving bowls. For a richer flavor, drizzle coconut milk over each serving.
Serve hot or cold, with ice if desired.

Time-saving Tips
Use a pressure cooker to reduce cooking time from 1-2 hours to just 15-20 minutes.
Soak the beans in warm water with salt beforehand to speed up the softening process.
Choose smaller, uniform black beans that are freshly harvested for quicker cooking and a more aromatic dessert.
Note:
Do not soak the beans for more than 8 hours, as they may turn sour.
If you don’t have a pressure cooker, you can lightly roast the beans in a pan (without oil) before cooking to reduce cooking time.
