Mix 2.5g soft jelly powder, 1g crispy jelly powder and 85g sugar well. Prepare a non-stick pan and pour in 500ml soy milk, 400ml fresh milk. Bring the mixture to a boil over medium heat. When you see steam start to rise a lot, add the mixed powder to the pan. When the milk boils, reduce the heat and continue adding 100ml fresh cream.

Adjust the heat to higher and boil for a while then turn off the heat. Pour about 100ml jiggly jelly mixture into each glass and wait for the jelly to set for about 1 hour. Note that throughout the cooking process, always stir with your hands to mix the ingredients together and avoid burning the mixture.

Step 2 Making sweet jelly with palm sugar

Pour 1g soft jelly powder, 0.6g crispy jelly powder and 400ml water into a pan and stir until the jelly powder dissolves and blends into the water, then continue adding 140g palm sugar, soak for 30 minutes. After that, peel and cut the ginger into small pieces and add to the pan.

Turn on the heat, bring the mixture to a boil over high heat, while stirring continuously. When the sweet jelly mixture boils, reduce the heat to medium and skim off any foam, let the mixture boil for about 30 – 45 seconds then turn off the heat. For the sweet jelly, pour about 50ml into each glass, wait for the jelly to cool down, then put it in the refrigerator.

Step 3 Cooking coconut milk

To cook the coconut milk, mix 400ml coconut milk, 20g sugar, 2g salt, 3g cornstarch well. Then, bring the pan with the ingredients to the stove and cook over high heat while stirring continuously. When the mixture boils for about 10 seconds, turn off the heat, let the coconut milk cool down a bit, then put it in the refrigerator to store.
