– Red spinach: 1 handful
– Cold rice: 1 bowl

2. Steps to make stir-fried red spinach rice
Step 1: Prepare the ingredients
– After buying red spinach, remove the withered leaves, cut off the roots. Then pick the young leaves and wash them, drain and chop them.
– Peel the garlic, wash it, mash it, and mince it.
– Remove the withered leaves of the scallion, wash them with clean water and cut them into short pieces.
Step 2: Stir-fry the red spinach
– Put the pan on the stove, add a little cooking oil and sauté the minced garlic.
– When the garlic turns slightly yellow and fragrant, add the chopped red spinach and stir-fry quickly over high heat.
– Wait for the red spinach to become soft, then add a little salt to taste.
Step 3: Stir-fry the red spinach with cold rice
– Next, add the cold rice and stir evenly over low heat.
– Stir continuously until the rice turns a beautiful pink color, then taste the seasoning again.
– If the rice is not flavorful enough, you can add a little fish sauce. Fish sauce not only makes the stir-fried rice more delicious but also has a very attractive aroma.
– When the rice grains are firm, add the scallion and stir quickly, then turn off the heat and transfer the rice to a plate to enjoy.

3. Notes when making stir-fried red spinach rice
– Before stir-frying the rice, you should put the cold rice in the refrigerator and leave it overnight. This will make the rice fluffier, not stick together, and taste better. In case you don’t have cold rice, you can also cook hot rice and wait for it to cool completely before stir-frying.
– Depending on your taste, you can add other ingredients such as shrimp, minced pork, chicken meat… to the stir-fried rice to make it more nutritious.
– If you have pork fat, you should use this ingredient instead of cooking oil because fatty fried rice is usually richer and more flavorful.
