Mochi chocolate chip cookies are a sweet and easy-to-make treat. These cookies combine the chewy and crispy texture of mochi with the rich chocolate flavor of the cookie.

Step 1 Mix the cookie dough

First, combine 113g softened butter, 70g brown sugar, 15g granulated sugar in a bowl and cream together. Add 1 egg and a splash of vanilla extract and continue to mix well.

In another bowl, combine 160g all-purpose flour, 1/4 teaspoon salt, 1/2 teaspoon baking soda, and mix until well combined. Add this flour mixture to the butter mixture and mix until well combined.

Next, sift 15g cocoa powder and mix well. Add 40g chocolate chips and mix well. Wrap the dough in plastic wrap and refrigerate for about 1 hour.

Step 2 Make the mochi

In a bowl, combine 70g glutinous rice flour, 20g cornstarch, 15g sugar, 140ml milk. Mix well until the ingredients are well incorporated.

Wrap the bowl with plastic wrap. Microwave on high 800W for 1 minute 30 seconds. Remove the bowl, stir well, and microwave for an additional 1 minute 30 seconds until the dough is cooked.

Add 20g coconut oil to the dough and knead until smooth and elastic. Be careful not to burn yourself!

Step 3 Shape the cookies

Divide the cookie dough into small portions, about 20g each. Enclose each portion with a piece of mochi dough, then shape it into a round disc. Place a few chocolate chips on top.

Step 4 Bake the cookies

Preheat the oven to 180°C. Place the cookies on a baking sheet and bake for about 10 minutes. Then reduce the temperature to 160°C and bake for an additional 4 minutes until done.

Let the cookies cool on a wire rack before serving. If not consumed immediately, store in an airtight container.
