1What is Am Phu rice?

Am Phu rice is a mixed rice dish, in which white rice is combined with various side dishes. These side dishes are usually processed into small pieces or minced, including , , , , pickled greens, crispy fried fish, and .

The white rice in Am Phu rice is a type of slightly dry and ground rice, cooled down and placed in the center with the side dishes around. Besides, you can add some seasonings like , , , to create the desired salty-sweet taste.

2Origin of Am Phu rice

According to legend, this dish originated from the Nguyen Dynasty. Once the king disguised himself as a commoner for a trip, he stayed at an old woman’s house. Although the family was not rich, the old woman treated the guest with a bowl of white rice and various simple dishes.

The king sat eating in a dim room, only with flickering oil lamps, so after finishing the meal, he called it Am Phu rice. After returning to the palace, the king could not forget the special taste of that rice dish. He selected talented chefs to recreate the dish, and only the head chef Tong Phuoc Ky satisfied the king. After serving in the royal court, the head chef opened a restaurant with many favorite dishes of the kings. Thanks to this, Am Phu rice has become known and passed down until today.

3How to make Am Phu rice

Ingredients:

  • Fresh shrimp
  • Pork loin
  • Spring rolls
  • Preserved pork sausage
  • Pickled cucumbers
  • Essential seasonings

Instructions:

Rinse and cook the rice, fluff to separate the grains and let it cool. Then, beat the eggs, fry them, and cut them into threads. Grill the shrimp until cooked, peel the shells, and crush them or cut them into small pieces. Mince the pork sausage and spring rolls into small pieces.

For pork loin, thinly slice them according to the large size, marinate with the necessary seasonings for about 20 minutes and then grill. Rinse the herbs and cucumbers, season with salt, and mix the pickled cucumbers to enhance the flavor. After that, you just need to scoop the rice onto a plate and arrange the ingredients like shrimp, grilled pork, spring rolls, sausage, eggs, and various herbs around it.
