When purchasing white amaranth, look for roots with only one strand, as this indicates the first harvest, resulting in tender and sweet leaves. If the roots have multiple fine strands, it means the vegetable has been regrown, and the texture will be tougher and less palatable.

Remove the roots and soak the leaves in cold water mixed with a little salt for about 20 minutes. This step helps to eliminate any dirt or sand that may be present. After soaking, thoroughly rinse the leaves multiple times with clean water.

Peel and rinse the garlic cloves, then slice them thinly. The more garlic you use, the more fragrant and tasty the dish will be.
