
Actress Phuong Oanh prepares a traditional Vietnamese plum sauce in her family kitchen.
Using 3 kg of plums, she combines 2.5 liters of fish sauce, 350 ml of filtered water, and 1.2 kg of white sugar. The mixture is stirred, boiled for 5 minutes, and then cooled completely.
Sterilized glass jars are dried thoroughly. Phuong Oanh layers the plums, garlic, and chili peppers inside before pouring the cooled fish sauce mixture over the ingredients. She notes that the sauce is ready to enjoy after just three days.
“The plums retain their crispness and mild sourness, blending perfectly with the sweet and savory fish sauce and the aromatic garlic and chili. The distinctive fragrance of the plums infuses the sauce, making it irresistible,” she shares.

Phuong Oanh mentions this was her first attempt at making this dish. From the moment she mixed the fish sauce, she knew the flavors would harmonize well, ideal for dipping boiled pork or water spinach.
After three days, she proudly presents the finished sauce as the centerpiece of a family meal, paired with boiled pork belly, water spinach, stir-fried shrimp with starfruit, and crab soup with morning glory and taro.
