  • 170g butter
  • 12 egg yolks
  • 4 egg whites
  • 70g coconut milk
  • 120g sugar

Step 1 Beat the butter mixture

Combine 70g condensed milk, 170g softened butter, 80g vegetable oil margarine in a bowl. Beat the mixture using a whisk until it turns pale yellow, about 7 minutes.

In another bowl, beat 12 egg yolks, 80g sugar, 1 teaspoon of vanilla extract until the mixture is smooth.

Add the butter mixture to the egg yolk mixture. Gently mix the two together.

Sift 70g cake flour, 2g salt, 1/3 teaspoon pandan extract into the butter and egg mixture. Mix until well combined.

In a large bowl, beat 130g egg whites, 1 teaspoon of lime juice on low speed.

Gradually add 40g sugar to the whites and beat on medium speed. Continue beating on high speed until the mixture forms stiff peaks.

Gradually fold the beaten egg whites into the cake batter. Gently mix until well incorporated, being careful not to deflate the batter.

Preheat your oven to 200°C. Line the baking pan with parchment paper and spread a thin layer of butter. Spread a thin layer of batter, about 1/2 cup, onto the pan. Bake for 5 – 6 minutes on the top rack at 200°C.

Remove the pan, spread another thin layer of batter, and bake for an additional 5 – 6 minutes at 200°C. Repeat this process until you use up all the batter.
