Ingredients
– Beef: 250g.
– Ginger: 1 piece.
– Garlic: half a bulb.
– Dark soy sauce: 2 tablespoons.

– Mild red chili.

– Coriander: 1 bunch.
– 10g sugar.
Instructions
Step 1. Marinate the beef
Slice the beef thinly against the grain. Mix in 3 tablespoons of vegetable oil, 2 tablespoons of dark soy sauce, a pinch of white pepper, and 10g of sugar. Add a little cornstarch and mix well. Finally, add 1 tablespoon of oil to “lock in the moisture,” keeping the beef juicy when stir-frying. The sugar added during marination helps keep the meat tender and sweet.
Step 2. Prepare the other ingredients
Cut the ginger into small cubes and crush and finely chop the garlic. Slice the mild chili and pickled chili (if using). Wash the coriander and cut into 3-4cm pieces. Avoid cutting them too long, as they may not cook through, leading to overcooked beef.
Step 3. Stir-fry the beef
Heat a wok until smoking, add more oil than usual, and wait until hot. Add the ginger and garlic and stir-fry until fragrant. Put in the marinated beef and stir-fry quickly over high heat. Add a pinch of salt, and as soon as the color of the beef changes, dish it out. Do not overcook, or the beef will become tough.
There should be some oil left in the wok. Add a little more oil, then put in more ginger, garlic, and chili and stir-fry until fragrant. Add the coriander and stir-fry quickly, then return the beef to the wok. Adjust the seasoning to taste, give it a few stirs, and serve.
The stir-fried beef with coriander is now ready to be served! It’s a delicious and hearty dish that goes well with rice.
Note:
When marinating the beef, avoid using soy sauce, as the dark soy sauce and white pepper are enough. The goal is to retain the dry, aromatic flavor of the beef. Soy sauce has a strong flavor that can overpower the dish.
