When buying meat or ribs, many people lightly touch the surface to check for freshness. Fresh ribs should feel slightly firm with a minimal natural stickiness.
If the ribs feel excessively slimy, overly sticky, or soft to the touch, or if there’s a noticeable mucus layer, it’s best to skip them. These could be signs of ribs that have been stored too long, are starting to spoil, or have been treated with solutions to maintain a fresh appearance. Such ribs not only lack flavor but also pose potential health risks.

Ribs lacking elasticity
A simple way to test rib freshness is to press the meat lightly with your finger.
If the surface bounces back quickly after releasing, the ribs are fresh. If the indentation remains for a long time or the meat shows little to no elasticity, it indicates the ribs have been stored too long and their quality has deteriorated. Avoid purchasing such ribs.
Ribs that are excessively wet or leaking fluid
Fresh ribs should appear dry and clean when displayed. If the meat looks overly wet, releases fluid when pressed, or the seller frequently wipes moisture from the surface, proceed with caution.
Experienced butchers warn that this could be a sign of water injection to increase weight. This practice not only means paying more for water but also reduces the quality and nutritional value of the ribs.

Ingredients
500g ribs.
1 egg white.
1 tablespoon cornstarch.
2 shallots.
1 spring onion.
Seasonings: seasoning powder, pepper, sugar, fish sauce, vinegar, tomato sauce, and cooking oil.

Instructions
Step 1: Prepare and marinate the ribs
Choose tender ribs with more meat and smaller, softer bones for better results. Clean the ribs and cut them into bite-sized pieces.
Peel and mince the shallots. Marinate the ribs with seasoning powder, pepper, and half the minced shallots for 15-20 minutes to allow the flavors to penetrate.
