Simmer over low heat for about 15 minutes, without stirring or flipping the chicken to avoid tearing the skin. After that, turn off the heat, cover the pot, and let the chicken steep for another 10 minutes.

When the chicken is cooked, take it out and immerse it in a large bowl of clean water. Change the water two to three times to help the chicken cool down faster.

While the chicken cools, prepare the scallion oil: Heat cooking oil over low heat, then add sliced white onion, chopped onion, and chopped scallion sections. Fry until golden. Once done, remove the fried aromatics and drizzle the scallion oil over the finely chopped scallions.

When the chicken has cooled, cut it into bite-sized pieces and arrange them on a plate. Finally, pour the scallions and scallion oil over the chicken to create a mouthwatering dish.
