Tip: When choosing sweet corn, opt for cobs with fresh green husks that are tightly hugging the corn. Avoid dry, yellow, rough, or moldy husks. Select corn with dark brown silk that is soft and firmly attached to the cob. Stay away from corn with black, withered, or sparse silk.
2 How to Make Sweet Corn Stir-fried in Soup
Step 1 Prepare the Ingredients
For the sweet corn, use your hands or a knife to remove the kernels, keeping the cobs for making the broth.
Rinse the pork bones and set them aside to dry. Clean the scallions and chop them finely, separating the scallion whites and greens.

In the same pan used for the shrimp, melt 30g of unsalted butter and sauté the remaining scallion whites. Then, add the corn kernels and enough broth to just cover the corn. Simmer over medium heat for about 15 minutes.
Next, season the corn with 5g of salt, 10g of seasoning powder, and 15g of sugar. Continue cooking for another 5 minutes before adding 30g of unsalted butter. Once the butter has melted and combined with the corn, add the scallion greens and turn off the heat.
