1. Cucumber, Lotus Root, and Peanut Salad

1.1. Ingredients for the salad

– Cucumber: 1 fruit

– Lotus root: 1 root

– Peanuts

– Seasonings: Salt, sugar, soy sauce, balsamic vinegar

1.2. Instructions for the salad

Step 1: Prepare the ingredients

– After buying the lotus root, wash it thoroughly. Then drain the water and cut it into bite-sized pieces.

– Wash the cucumber with clean water, peel it, and cut it into small pieces.

– Roast the peanuts until they are cooked.

Step 2: Prepare the dressing

– Take a small bowl, then add 1 spoonful of soy sauce, ½ teaspoon of sugar, 1 spoonful of balsamic vinegar, and ½ teaspoon of salt.

– Stir the ingredients together with chopsticks or a spoon until they are well dissolved.

Step 3: Mix the salad

– Put the prepared cucumber, roasted peanuts, and lotus root into a large bowl.

– Then, pour the dressing over the ingredients and mix well using kitchen utensils. Let it sit for a few minutes for the ingredients to absorb the sauce.

After being prepared, the cucumber, lotus root, and peanut salad will have an attractive color with the white of the lotus root, the green of the cucumber, and the pinkish red of the peanuts. When eating, you will be able to taste the refreshing cucumber and lotus root, the creamy and flavorful roasted peanuts, and the tangy and sweet dressing.

2. Pickled Peanuts with Vinegar

2.1. Ingredients for pickled peanuts

– Raw peanuts: 200 grams

– Salt

– Rice vinegar: 2 spoons

2.2. Instructions for pickled peanuts

Step 1: Prepare the peanuts

– After buying raw peanuts, wash them and let them drain.

Step 2: Cook the peanuts

– Place a pot on the stove, add the raw peanuts and cover them with enough water. Then cover with a lid and turn on the heat to boil.

– Wait for the peanuts to boil for about 10 minutes, then turn off the heat and soak for another 5 minutes before scooping them into a strainer.

– Rinse the boiled peanuts with cold water to remove impurities. Gently rub the peanuts to remove the shells, then scoop them into a strainer to drain.

Step 3: Marinate the peanuts with vinegar

– Put the shelled boiled peanuts into a large bowl, then add a small bowl of vinegar and a little salt. Then, use chopsticks or a spoon to mix them well and let them soak for about 30 to 60 minutes.

– Scoop the peanuts onto a plate, then add cucumbers, various vegetables, and enjoy at your own pace.

When enjoying pickled peanuts, you will taste the crunchy and fragrant peanuts combined with a light tanginess. You can use pickled peanuts as a snack or eat them together with plain rice.
