How to make refreshing sour fish soup
Step 1: Prepare the ingredients
Clean the fish, remove the scales, and cut into pieces. Rub the fish with a little salt, lime or white wine, and rinse to eliminate the fishy smell. Then, marinate the fish with a bit of fish sauce, MSG, and minced garlic for 10 minutes to enhance the flavor.
Peel and wash the ginger, then mince it. Cut the chili in half, remove the seeds, rinse, and cut into small pieces. Wash and finely chop the green onions and dill. Peel the pineapple, remove the eyes, and cut into small pieces. Soak the tamarind in hot water, crush it, and strain the tamarind juice. Wash the tomatoes, cut off the stem ends. Wash the corn and cut diagonally.
Step 2: Cook the delicious sour fish soup
Turn on the stove. Add cooking oil to the pan and heat it up. Then, add the minced garlic to the pan and stir-fry until fragrant over medium-low heat. When the garlic turns golden, remove it and set aside. Next, fry the fish lightly on both sides to firm up the meat and prevent it from becoming fishy when cooked. Transfer the fish to a plate and set aside.
Continue adding a little cooking oil, stir-fry the dried onions until fragrant, then add half of the tomatoes to stir-fry to create color. Then, add the pineapple and continue stirring, add half a teaspoon of salt and cook for 3-5 minutes.
Next, add 1-1.2 liters of filtered water and tamarind juice to a pot. Turn on the stove and bring the water to a boil. When the warm water starts to bubble, add the fish. Season with 2 tablespoons of fish sauce, 1 tablespoon of sugar, and half a teaspoon of salt. When the water is boiling, lower the heat and remove any foam.
After 5 minutes when the fish is cooked, add the stir-fried tomatoes and pineapple, along with the remaining tomatoes, to continue cooking. After a few minutes, add the corn and cook for 2 minutes, then add the bean sprouts, half a tablespoon of fish sauce, and 1 teaspoon of MSG to the pot.
Before turning off the stove, add the chopped green onions and dill to the soup and season to taste. Once the fish sour soup is cooked, serve it in a bowl with additional chili on top and enjoy it with steamed rice or noodles.
