In traditional Vietnamese cuisine, tofu with sauce is a familiar dish. A few pieces of fried tofu or simply tofu with sauce, served with tomatoes or a little minced meat, is a light yet satisfying meal. But instead of the traditional sauce, try tofu with young vegetables to add more vegetables to your menu, with a delicious and unique dish for your family.
Prepare the ingredients
Young tofu or egg tofu: 2 pieces (200g). You can also use regular tofu, but young tofu will be softer and more tender.
Vegetables include: 2 tomatoes, 150g winter melon, 50g sweet corn, 4-5 dried shiitake mushrooms (fresh or soaked in water), 2-3 spring onion stalks (if using Chinese chives, it will have a distinct aroma and is suitable for vegetarian diets)
Seasonings: Sugar, seasoning powder, satay sauce, soy sauce, salt
Step 1: Prepare the ingredients
Wash the tofu and remove the sour water from the tofu. Cut the tofu into bite-sized pieces, about 1.5cm thick.
Wash the vegetables: tomatoes, winter melon, shiitake mushrooms, and separate the corn kernels. Chop the spring onions.
Step 2: Make the vegetable sauce
Heat the pan and add 2 tablespoons of cooking oil. When the oil is hot, add the spring onions and sauté until fragrant. Then add the vegetables and stir-fry until the tomatoes release their juice and soften. Season with salt, seasoning powder, a little sugar (if you prefer it sweeter), 1 tablespoon of soy sauce, and 2 tablespoons of satay sauce. Simmer on low heat to let the vegetables absorb the seasoning.
Add the tofu and simmer gently to prevent the tofu from breaking. Gently stir with a spatula to avoid breaking the tofu. Pour the sauce evenly over the tofu to let the tofu absorb the sauce. Finally, add the spring onions and sprinkle a little ground pepper on top.
This tofu with vegetable sauce is quick and easy to make. You can also add sliced winter melon or a few pieces of turnip or mushrooms according to your preference. This dish is best served hot with steamed rice.
Note: Do not simmer the sauce for too long as it will make the vegetables too soft and sour, and the tofu may break or become tough.
You can adjust the amount of satay sauce according to your preference for spice level and vegetarian diets. Tofu with vegetable sauce is also a dish that children enjoy and helps them eat more vegetables.
