Instructions
- Wash the tofu thoroughly, cut into square or 1cm-thick pieces (depending on your preference); Wash the spring onion, finely chop; Peel the purple onion, slice it; Finely chop the chili.
- Mix 3 tablespoons of fish sauce, 1 tablespoon of sugar, 1 teaspoon of ground pepper, 3 tablespoons of water, finely chopped spring onion, and chili (adjust the spiciness) in a bowl until well combined.
- Heat the oil in a pan over high heat, then reduce to medium heat and fry the tofu until golden and crispy (pour enough oil to cover half of the tofu to achieve a crispy crust while keeping the inside soft). Transfer the tofu to absorbent paper to remove excess oil.
- Remove some of the oil from the frying pan, sauté the sliced purple onion until golden and fragrant, then add the mixture from the bowl and bring to a boil (adjust the taste if necessary), stir well and let it simmer for about 10 seconds before turning off the heat.
- Arrange the tofu on a plate, pour the onion sauce on top or pour the sauce into a separate bowl. When eating, dip the tofu in the onion sauce.
