When it comes to baking, many people often think about the need for specialized equipment and an oven. However, you can actually make many types of bread using a pan and an electric rice cooker, including baguettes.
Homemade bread is delicious, soft, and safe, avoiding the risk of E.coli contamination when buying bread from street vendors.
Ingredients:
Type 13 flour 250 g. Flour is numbered, with 13 being the toughest type. If the flour is not numbered, you can look for a protein content of over 13% to identify type 13 flour. All-purpose flour usually has a protein content of 11%, while some lower protein flours can be as low as 8%. The higher the protein content, the tougher the flour.
Unsweetened milk 150 ml
Sugar 50 g
1 chicken egg
5 g yeast
2 g table salt
40 g unsalted butter
Tools needed: Mixing bowl, sifter, electric rice cooker, bowls, plates…
Step 1 – Mixing the dough
Sift the flour to avoid lumps. Mix the sugar and salt into the bowl, then add the yeast and mix well.
Melt the butter in a microwave or steam it until it melts. Add the egg and fresh milk to the middle of the bowl and mix well. Create a well in the middle of the flour, then pour the mixture into it. Knead the dough until it becomes smooth and elastic. Press it down and if it springs back, the dough is ready. If the dough is slightly wet, you can add a little more flour while kneading. Avoid over-kneading the dough.
Let the dough rest for 1 hour until it doubles in size. Cover the dough with plastic wrap to prevent it from drying out.
Step 2 – Shaping the bread
After the dough has risen, knead it again for about 2-3 minutes, then divide it into small portions. You can shape the dough into oval or round shapes and make small cuts on the surface using a knife. Place the dough in the rice cooker, lining the bottom with parchment paper. Put the bread in and set the cooker to cook. After about 10 minutes, the bread is cooked. You can then switch to the “cook” mode 3 more times to make the bread crispier.
To make the bread crust golden and crispy, before baking, brush the surface with beaten egg yolk and flip the bread to lightly brown the other side.
With this method, you can make delicious and fresh homemade bread that can be enjoyed immediately.
Note that for a fragrant and crispy bread, choose fresh flour. If the flour is stored for too long, it may become moldy and have a musty smell, which will affect the flavor of the bread. If you don’t have type 13 flour, you can use all-purpose flour instead.
When using yeast, make sure to choose a reputable brand to ensure safety. Avoid using expired yeast. Yeast helps enhance the flavor of the bread and make it lighter and fluffier.
