1. Ingredients for pork simmered with shrimp paste

– Pork (choose finely minced fatty pork or pork shoulder): 500 grams

– Shrimp paste: 5 tablespoons

– Pork fat: 1 small bowl

– Galangal, lemongrass

– Garlic, dried shallots, chili

– Seasonings: Sugar, ground pepper, pork fat or cooking oil

2. Method to make pork simmered with shrimp paste

Step 1: Prepare the ingredients

– After buying the pork, wash it thoroughly and cut it into small pieces. Then mince or finely grind the pork.

– Peel the garlic, dried shallots, and wash them clean, then finely chop them.

– Peel the galangal, remove the tough outer layer of lemongrass, wash them clean, and finely chop them.

– Wash the chili peppers, remove the stems, and cut them into small pieces.

Step 2: Mix the ingredients

– Take a large bowl, then add the minced pork, 5 tablespoons of shrimp paste, 50 grams of finely chopped galangal, 5 finely chopped lemongrass stalks, small pieces of chili pepper, 4 large garlic cloves, and 4 finely chopped dried shallots.

– Mix the ingredients well and wrap them tightly in plastic wrap. Put it in the refrigerator for about 1 hour to let the meat rest and absorb the flavors.
