When it comes to choosing eggs, aside from freshness, the size of the eggs can also be a consideration. Some people tend to opt for larger eggs, assuming they offer more nutritional value. However, according to an experienced chicken farmer, this isn’t necessarily true.
Why do experienced people choose smaller eggs?
It’s related to the age of the hen.
Larger eggs usually come from older hens that have laid many clutches. Over time, hormones tend to accumulate in the bodies of older hens, affecting egg quality. On the other hand, smaller eggs typically come from younger, healthier hens that have not been as exposed to industrial feed or growth enhancers. Eggs from younger hens are not only fresher but also considered higher in quality.

Especially, the first clutch of a young hen is usually considered tastier and more flavorful, which is why many people prefer to buy these eggs.
It depends on how the chickens are raised.
The living environment and diet of chickens also impact egg size. Chickens raised in industrial settings, with limited space to move and a diet rich in protein and fat, tend to lay larger eggs. In contrast, free-range chickens that roam freely and feed on natural vegetation, grains, and insects tend to lay smaller eggs, but they are of higher quality.
Eggs from free-range chickens often have darker yolks, a distinct aroma, and less fishy taste, making them a favorite among consumers despite their lower production volume and smaller size compared to industrial eggs.
So, which eggs should you choose?
In reality, the nutritional difference between large and small eggs is negligible. The main distinction lies in their flavor and source. Therefore, you can flexibly choose according to your preferences and cooking purposes, without necessarily prioritizing size.
Rest assured that eggs are always a nutritious and versatile food. Below are two delicious egg dishes that you can try for your family meals.
FRIED EGGS WITH CLAMS
Ingredients:
– Clam meat: 150gr
– Farm eggs: 4-5
– Spring onions, onions, seasoning powder, pepper, cooking oil.
Instructions:
Rinse the clam meat and set it aside to drain. Peel and finely chop the onions. Chop the spring onions after removing the roots and wilted leaves.
Break the eggs into a bowl, add some seasoning powder and chopped spring onions, and beat well.
Heat oil in a pan over medium heat. Add the chopped onions and fry until fragrant. Then, add the clam meat and some seasoning powder, stirring until the meat is cooked.
Pour the beaten eggs over the clam meat and fry until the bottom is golden. Use a spatula to flip it over and continue frying the other side until golden.
The combination of egg and clam not only tastes delicious but also provides abundant nutrition, especially for children.
BAKED EGGS
Preparation:
– Eggs: 10 (preferably at room temperature)
– Honey: 2 teaspoons
– Ground pepper: 1 teaspoon (optional for those with young children)
– Seasoning: a pinch
– Fish sauce: 1 teaspoon
– Seasoning powder: a pinch
– Herbs: mint, Vietnamese coriander, basil, salt and pepper, lime, cucumber, etc., according to preference.
Additionally, you’ll need some equipment:
– A strainer, a cup with a long spout for pouring, a tray/cup for holding the eggs, or aluminum foil.
– An air fryer
Instructions:
Step 1: Preparation
– Use scissors or a sharp knife to pierce a hole at one end of each egg.
– Use a chopstick to stir the inside of the egg gently to mix the yolk and white, making it easier to pour out.
Step 2: Mix the eggs
Mix all the seasonings mentioned above with the eggs.
– Beat the eggs until the yolk and white are well combined. Strain the mixture 2-3 times to ensure a smooth consistency and remove any large air bubbles.
Step 3: Baking
– Pour the seasoned egg mixture back into the empty egg shells.
– Use an air fryer to bake the eggs – this ensures even cooking and makes it easier to peel the shells.
– Set the temperature to 90 degrees Celsius for 40-60 minutes, then increase to 100 degrees Celsius for another 15 minutes, depending on the size of the eggs (use a skewer to check if they’re cooked).
For a more aromatic result, increase the temperature to 130 degrees Celsius for an additional 2-3 minutes.
If you’re using smaller eggs, bake them for about 40 minutes. For larger eggs, bake for about 60 minutes.
Final Result
The baked eggs should have a smooth, glossy appearance and a firm yet bouncy texture.
How to make a dipping sauce:
– Mix salt, ground pepper, chili powder, fresh chili, lime juice, and sliced lime.
Serving Suggestion
Enjoy the freshly baked eggs with your family. The experience of peeling the eggs, blowing on them to cool them down, and dipping them in the spicy-sour sauce is truly delightful.
Happy cooking!
