Ingredients
- 500g fresh shrimp (choose live shrimp with shiny shells and heads firmly attached)
- Marinade for shrimp:
- 500ml filtered water
- 1 tablespoon white wine (or rice wine)
- 1 teaspoon salt
- 1 teaspoon minced ginger (or a few slices of fresh ginger)
- Optional seasonings for steaming:
- Lemon leaves, lemongrass, ginger, scallions
- Salt and pepper or dipping sauce of your choice

Instructions
- Prepare the shrimp: Rinse the shrimp under running water to remove any dirt and impurities. Cut off the shrimp’s whiskers, legs, and sharp ends (if desired). Using scissors, make a light slit along the back of the shrimp to allow better absorption of marinade and removal of the black vein (intestine).
- Marinate the shrimp: In a large bowl, mix 500ml of filtered water with 1 tablespoon of white wine, 1 teaspoon of salt, and 1 teaspoon of minced ginger. Soak the shrimp in this mixture for about 10-15 minutes. Do not over-soak to prevent the shrimp from losing moisture and becoming less fresh. After marinating, drain the shrimp and pat them dry with a paper towel.
- Steam the shrimp: Prepare the steamer by lining the bottom with a few slices of lemongrass, ginger, or lemon leaves to infuse flavor. Arrange the shrimp on the steamer basket and sprinkle with additional scallions or shredded ginger. Steam the shrimp for 5-7 minutes (depending on their size) over medium heat. When the shrimp turn bright red, with shiny shells and firm flesh, they are ready. Avoid over-steaming to prevent toughness.
- Serve: Place the steamed shrimp on a plate and garnish with herbs or scallions for a beautiful presentation. Serve with a dipping sauce of your choice, such as salted lemon pepper, ginger fish sauce, or any other sauce you prefer. Perfectly steamed shrimp will have a bright red color, firm and sweet flesh, and a delightful aroma, free from any fishy odor.
