Instructions

– Fresh chili leaves are washed and then soaked in saltwater. You can sterilize them to ensure that the leaves are free from bacteria.

– Put the clean chili leaves into a pot of cold water, sprinkle a little salt, boil for 10 seconds, then remove and rinse with water to eliminate any fishy smell in the leaves.

– Add a little oil to a non-stick pan, add the pork belly and stir-fry for about 3 minutes until the edges are charred, then add the onion, ginger, and chili. Add a little oyster sauce and soy sauce and continue stir-frying.

Note that the pork belly does not need marinating in advance. The excess fat released from the meat can be used to stir-fry vegetables, making the dish even more flavorful.

– Then add the drained chili leaves, flip on high heat for 5 seconds. Do not stir-fry for too long, as the vegetables will become mushy and affect the taste.

To make soup, choose young chili leaves (not too old or too young), wash them thoroughly, crush them slightly to soften, then drain.
