2 How to Make Fresh Gang Leaf Jelly
Step 1 Crush the Gang Leaves
Rinse the fresh gang leaves thoroughly under running water to remove any dirt and pat them dry. Take about 2 handfuls of these leaves and place them in a large bowl. Add 1/2 bowl of boiled and cooled water to the leaves. Now, use your hands to crush and squeeze the leaves until they release a vibrant green liquid.

Step 2 Strain the Leaf Pulp
Place a fine-mesh strainer over a bowl and line it with a muslin cloth. Pour the crushed leaf mixture into the cloth and gather the ends, gently squeezing out the liquid from the pulp. Discard the pulp and strain the liquid once more to remove any remaining sediment.
Let the strained liquid sit at room temperature for a few hours to set.

In a saucepan, combine 500ml of water and 60g of white rock sugar. Boil this mixture until the sugar dissolves completely. Then, pour the syrup into a bowl and add a few jasmine flowers for fragrance. You can store this syrup in the fridge.
