Preparation:

– Step 1: Rinse the pork belly and place it in a pot with water, salt, and soy sauce. Bring the water to a boil and cook the meat until it is slightly cooked on the outside. Remove the meat and drain.

– Step 2: Use paper towels to dry the surface of the meat. Poke holes in the skin with a fork and rub with vinegar and refined salt.

– Step 3: Air-dry the meat in the sun or in a well-ventilated area for about an hour.

– Step 4: Heat oil in a large pan, ensuring there is enough to submerge the meat. To prevent the meat from burning or sticking to the pan, you can place a small rack at the bottom. Once the oil is hot, carefully place the meat in the pan and fry until both sides are golden brown and the skin is crispy. Turn the meat over to ensure even cooking. Once done, remove from the oil and drain on paper towels before slicing into bite-sized pieces.

– Step 5: Prepare the dipping sauce by combining all the ingredients in a bowl and mixing well.
