– 500g of tender pork ribs

– 4 tablespoons of fish sauce

– 6 teaspoons of sugar

– 4 teaspoons of vinegar or lemon juice

– Cooking oil, fish sauce, and seasoning powder

– Garlic, shallots, scallions, chili, and onion

– Chili sauce, ketchup, or tomatoes

– Cornstarch

Simple Recipe for Sweet and Sour Pork Ribs

Step 1: Prepare the Ingredients

Rinse the ribs and cut them into bite-sized pieces. Parboil the ribs in water with a pinch of salt to eliminate any unpleasant odors, then rinse again. Marinate the ribs with 2 teaspoons of fish sauce, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder for about 15 minutes.

Peel and crush the garlic and shallots. Rinse the scallions and cut them into small pieces for garnishing. Peel and slice the onion.

How to Cook Sweet and Sour Pork Ribs

Step 2: Prepare the Sweet and Sour Sauce

In a bowl, mix 5 teaspoons of sugar, 4 teaspoons of vinegar, 2 cloves of minced garlic, 1 chili (finely chopped), half a bowl of lukewarm water, and fish sauce. Stir well. Instead of vinegar, you can use lemon juice or tamarind, or even tomatoes. If using lemon juice, add it at the end, as prolonged cooking can make it bitter.

To make the sauce thicker and a deeper red color, add chili sauce or ketchup.

Step 3: Stir-Fry the Ribs

After the ribs have absorbed the marinade, coat them with cornstarch. Heat some oil in a pan and fry the ribs until they turn golden brown. Remove the ribs and drain the excess oil on a paper towel.

In the same pan, sauté the shallots until fragrant. Return the ribs to the pan and add the onion and sweet and sour sauce. Mix well. Finally, thicken the sauce by stirring in a mixture of cornstarch and a little water.

Step 4: Serve

Dish out the ribs and sprinkle with chopped scallions. For a more appealing presentation, add sliced cucumbers and tomatoes. The sweet and sour pork ribs go well with steamed rice. The dish offers a delightful combination of sweet, sour, and spicy flavors. You can also use the sauce as a dip for boiled vegetables.
