– 500g of tender pork ribs

– 4 tablespoons of fish sauce

– 6 teaspoons of sugar

– 4 teaspoons of vinegar or lemon juice

– Cooking oil, fish sauce, and seasoning powder

– Garlic, shallots, scallions, chili, and onion

– Chili sauce, ketchup, or tomatoes

– Cornstarch

Step 1: Prepare the Ingredients

Rinse the ribs and cut them into bite-sized pieces. Parboil the ribs in water with a pinch of salt to eliminate any unpleasant odors, then rinse again. Marinate the ribs with 2 teaspoons of fish sauce, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder for about 15 minutes.

Peel and crush the garlic and shallots. Rinse and chop the scallions for garnishing. Peel and slice the onion.

Step 2: Prepare the Sweet and Sour Sauce

In a bowl, mix 5 teaspoons of sugar, 4 teaspoons of vinegar, 2 cloves of minced garlic, 1 chili (finely chopped), half a bowl of lukewarm water, and fish sauce. Stir well. Instead of vinegar, you can use lemon juice or tamarind, or even tomatoes. If using lemon juice, add it at the end, as prolonged cooking will make it bitter.

To make the sauce thicker and a deeper red color, add chili sauce or ketchup.

Step 3: Fry the Ribs

After the ribs have absorbed the marinade, coat them with cornstarch. Heat some oil in a pan and fry the ribs until they turn golden brown. Remove the ribs and place them on a plate lined with paper towels to absorb excess oil.

In the same pan, sauté the chopped shallots until fragrant. Return the ribs to the pan, add the onion and the prepared sweet and sour sauce, and stir-fry everything together. Finally, mix 1 teaspoon of cornstarch with a little water and pour it into the pan. Cook until the sauce thickens.

Step 4: Serving

Dish out the ribs and sprinkle with chopped scallions. For a more appealing presentation, add sliced cucumbers and tomatoes. This dish is best enjoyed with steamed white rice. The combination of sweet and sour flavors, along with a hint of spiciness, is truly mouthwatering. You can also use the leftover sauce as a dip for boiled vegetables.
