– 1kg of young pork spare ribs

– 4 tablespoons of fish sauce

– 4 teaspoons of vinegar or lemon juice

– Boiled water, cooled

– Garlic, shallots, scallions, chili, onion

– Chili sauce, ketchup or tomatoes

– Cornstarch

Simple Recipe for Sweet and Sour Spare Ribs

Step 1: Prepare the ingredients

Rinse the ribs, cut them into bite-sized pieces, and parboil in salted boiling water to remove any unpleasant odors. Rinse again, then marinate the ribs with 2 teaspoons of fish sauce, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder for about 15 minutes.

Peel and crush the garlic and shallots. Rinse and chop the scallions for garnish. Peel and slice the onion.

Step 2: Make the sweet and sour sauce

In a separate bowl, mix 5 teaspoons of sugar, 4 teaspoons of vinegar, 2 cloves of minced garlic, 1 chili (finely chopped), half a bowl of boiled water, and fish sauce. Stir well. You can substitute vinegar with lemon or green papaya, or even tomatoes. If using lemon, add it at the end as prolonged cooking will make it bitter.

To make the sauce thicker and a beautiful dark red color, add chili sauce or ketchup.

Step 3: Fry the ribs

After the ribs have absorbed the marinade, coat them lightly with cornstarch. Heat oil in a pan and fry the ribs until golden brown. Remove and drain on a paper towel.

In the same pan, sauté the shallots until fragrant, then add the ribs, onion, and sweet and sour sauce. Mix well. Finally, thicken the sauce by stirring in a mixture of cornstarch and water.

Step 4: Plate and serve

Dish out the ribs and garnish with chopped scallions. For a more appealing presentation, add sliced cucumbers and tomatoes. This dish is best enjoyed with steamed rice.
