How to Make Crispy Fried Squid

Step 1: Prepare the squid to remove any fishy odor

Rinse the squid under cold running water. Peel off the outer skin and remove the ink sac and backbone.

Cut the squid into round slices or bite-sized pieces (about 1-2cm).

Peel and grate the ginger, then mix it with 2 tablespoons of white wine. Marinate the squid in this mixture for about 15 minutes, then rinse again with water.

Blanch the squid in boiling water with a few slices of ginger for 1-2 minutes, then drain. This step ensures the squid is free of any fishy odor and maintains its crispness.

Step 2: Prepare the coating mixture

In a large bowl, combine 150g of crispy coating mix with 50g of cornstarch. Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of garlic powder to enhance the flavor.

In a separate bowl, whisk 1 egg and add 100ml of unsweetened milk to create a smooth mixture.

Step 3: Coat and fry the squid

Dip the squid pieces into the egg and milk mixture, ensuring they are well coated.

Roll the squid in the coating mixture, making sure each piece is evenly covered.

Heat cooking oil in a deep pan to a moderate temperature (around 170°C). Carefully place the coated squid into the oil and fry until golden brown, which should take about 2-3 minutes.

Remove the squid from the oil and drain on paper towels to absorb excess oil.

Step 4: Serve and enjoy

Arrange the crispy fried squid on a serving plate, garnishing with coriander or lettuce if desired.
