Step 1: Prepare the ingredients

Clean the ribs and cut them into bite-sized pieces. Parboil the ribs with a pinch of salt to get rid of any unpleasant smell, then rinse again. Marinate the ribs with 2 teaspoons of fish sauce, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder for about 15 minutes.

Peel and crush the garlic and shallots. Rinse and chop the scallions for garnish. Peel and slice the onion.

Step 2: Make the sweet and sour sauce

In a bowl, mix 5 teaspoons of sugar, 4 teaspoons of vinegar, 2 cloves of minced garlic, 1 chili (finely chopped), half a bowl of boiled water, and fish sauce. Stir well. You can substitute vinegar with lemon or green papaya, or even tomato. If using lemon, add it at the end as prolonged cooking will make the dish bitter.

To make the sauce thicker and a deeper red color, add chili sauce, ketchup, or tomato.

After the ribs have absorbed the marinade, coat them with cornstarch. Heat oil in a pan and fry the ribs until golden brown. Remove and drain on a paper towel.

In the same pan, sauté the shallots until fragrant. Add the ribs, onion, and sweet and sour sauce. Mix well. Finally, thicken the sauce with a mixture of cornstarch and water.

Step 4: Serve

Dish out the sweet and sour spare ribs and garnish with chopped scallions. You can also add sliced cucumbers and tomatoes for a more appealing and tasty dish. This mouthwatering dish goes well with steamed rice. The combination of sweet, sour, and spicy flavors is simply irresistible. You can also use the leftover sauce as a dip for boiled vegetables.
