Ingredients:

  • 3-4 cucumbers
  • 1 bunch of cilantro, mint leaves
  • 1 clove garlic
  • 1 chili pepper
  • 1/2 carrot
  • 1/2 lemon
  • 100g roasted peanuts
  • 1 tablespoon sugar, fish sauce
  • Salt

Step 1: Prepare the cucumbers

  • Wash the cucumbers and soak them in a brine solution for 15 minutes. Rinse and pat dry.
  • Cut the cucumbers in a way that maximizes their surface area, which will help absorb the flavors better.
  • Place the sliced cucumbers in a bowl and add a pinch of salt. Gently toss to coat and let it sit for 15 minutes. Drain any excess liquid to ensure a dry and flavorful salad.

Step 2: Prepare the herbs and spices

  • Finely chop the green onions, cilantro, chili pepper, and garlic.
  • Roast the peanuts if not already roasted.

Step 3: Make the dressing (including chili oil)

  • Prepare white sesame seeds and chili powder (adjust the amount to your taste preference)
  • Heat oil in a pan
  • Pour the hot oil over the chili powder and sesame seeds. Be careful not to use too much oil, just enough to cover them.
  • Add 7 tablespoons of cold vinegar, 1 tablespoon each of cooking wine, pepper oil, and soy sauce to make approximately 150ml of chili oil.

Add half a teaspoon of salt and one teaspoon of sugar. Feel free to adjust these quantities to your taste.

Step 4: Mix everything together

Combine all the ingredients, including the dressing, and toss well. Your cucumber salad is now ready to be served!
