Ingredients for Pickled Cauliflower
– 1kg cauliflower
– 1 rhizome of galangal
– 1 bulb of garlic
– 2 chili peppers
– 1 tablespoon of salt
– 1 tablespoon of vinegar
– 1 tablespoon of sugar
How to Make Delicious Pickled Cauliflower
Step 1: Preparation
Choose mature, round, and fresh-looking cauliflower. Remove the stems, wash thoroughly, and sun-dry for 3-4 hours until slightly wilted. This step ensures crispier pickled cauliflower.
Clean the galangal and garlic, and peel their skins. Slice the galangal and garlic, and finely chop the chili peppers. Thoroughly clean and dry a large glass jar with a lid for pickling.
Step 2: Pickling the Cauliflower
Boil ½ pot of water and add 1 tablespoon each of salt and sugar. Allow the mixture to cool, and then add 1 tablespoon of vinegar. In the glass jar, create layers in the following order: galangal and garlic, 250g of cauliflower, more galangal and garlic, another 250g of cauliflower, and finally, the remaining galangal, garlic, and chili peppers. Pour the liquid mixture into the jar until it covers the cauliflower. To prevent discoloration, use a rack or wrap to compress the contents and minimize air contact.
Step 3: Completion
Seal the jar and store it in a cool, ventilated area. Your delicious pickled cauliflower will be ready in 2-3 days.
Step 4: Serving
This pickling method results in crispy, white cauliflower. Enjoy it as a side dish with hot rice or incorporate it into other meals for added flavor. Try mixing the pickled cauliflower with chili sauce or fermented shrimp paste for a bolder taste.
