Offal Sauce Ingredients:

200g chicken offal (heart, liver, gizzard, etc. to your preference)

1 teaspoon shallots

1 tablespoon palm oil

Chicken Salad Ingredients:

100g papaya

100g carrot

100g onion

1 tablespoon garlic

80g chili

3 calamansi (or key limes)

1 tablespoon cooking oil

20g fried shallots

20g Vietnamese coriander

Seasonings:

Salt, sugar, fish sauce, MSG, five-spice powder, pepper.

2. How to Make Hoi An Chicken Rice

Step 1: Boil the Chicken

After cleaning the chicken, place it in a large pot and add enough water to cover it completely. Also add 1 peeled onion, 4 peeled shallots, 20g sliced ginger, 1 teaspoon of salt, and 1 tablespoon of turmeric powder to give the chicken a beautiful yellow color.

Bring the water to a gentle boil, then reduce the heat to low, cover, and continue to cook the chicken for another 20 minutes. After that, turn off the heat and let the chicken sit in the hot water for an additional 5-10 minutes to ensure it’s thoroughly cooked. Finally, remove the chicken and rinse it with cold water to help tighten and crisp the skin.

Reserve the chicken broth for cooking the rice.

Once the chicken has cooled down a bit, shred it into small pieces. Marinate the shredded chicken with 1/2 teaspoon each of salt, MSG, and pepper, along with 1 teaspoon of sugar and the juice of 3 calamansi (or key limes). Mix well and then wrap the chicken with plastic cling film.

Heat 1 tablespoon of cooking oil in a pot. Add a few cloves of peeled garlic and fry until fragrant. Then, add 200g of white rice (rinsed and drained) and stir-fry until the rice is dry. Next, pour in the reserved chicken broth until it just covers the rice. Cover and cook until the rice is done.

Clean and dice the chicken offal. Marinate with 1 teaspoon of sugar, 1 teaspoon of MSG, 1/2 teaspoon each of salt and pepper, and 1 teaspoon of five-spice powder for 15 minutes to let the flavors absorb.

Heat 1 tablespoon of palm oil in a pan. When the oil is hot, add the marinated offal and stir-fry until cooked. Then, pour in 100ml of water and simmer for another 10 minutes until the water reduces. Adjust the seasoning to your taste, if needed.

Heat a pan and add 1 tablespoon of cooking oil. When the oil is hot, add 1 tablespoon of chopped garlic and fry until golden. Remove the garlic from the pan and set aside.

In the same pan, add 80g of chopped chili, 50g of white sugar, and 50ml of fish sauce. Stir well and simmer until the mixture becomes syrupy. Then, add the fried garlic back into the pan and mix well. Turn off the heat.

Peel and shred the papaya and carrot. Peel and cut the onion into wedges. Place all the vegetables into a bowl of ice water for 15 minutes, then drain and set aside. This step helps to reduce the pungency of the onion and adds a nice crunch to the salad.

In a mixing bowl, combine the papaya, carrot, onion, 5g each of salt, pepper, and MSG, and a few spoonfuls of the chili sauce, depending on your preferred level of spiciness. Gently mix without squeezing the vegetables, as this can make the salad watery.

Finally, squeeze in the juice of 3 calamansi (or key limes), add some Vietnamese coriander and fried shallots, and give it a final mix.
