Ingredients for Black Bean Dessert
Black beans: 300g
Sugar: 200g (adjust to taste)
Water: 1.5 liters
Salt: 1/4 teaspoon
Ginger: 1 small root (about 10g, sliced)
Pandan leaves: 2-3 leaves (optional, for aroma)
Equipment:
Pressure cooker or regular pot
Stove, bowls, spoons

How to Cook Black Bean Dessert Quickly
Step 1: Prepare the black beans
Rinse the black beans and soak them in warm water for about 1-2 hours to soften them. If you’re short on time, you can skip the soaking, but the cooking time will be longer.
Remove any damaged or floating beans.
Step 2: Roast the black beans
This step is key to making your black bean dessert soft and flavorful. Place the beans in a pan and roast them over medium heat for 5-7 minutes until lightly toasted. Remember to stir frequently to avoid burning.
After roasting, transfer the beans to a pressure cooker or regular pot.
Step 3: Cook the black beans
For a pressure cooker: Add 1.5 liters of water, pandan leaves (if using), and 1/4 teaspoon of salt to the pot with the beans. Close the lid and cook at high pressure for 15-20 minutes. Then, release the pressure and open the lid.
For a regular pot: Pour 1.5 liters of water into the pot and bring it to a boil. Reduce the heat and simmer for 45-60 minutes until the beans are soft. Stir occasionally and skim off any foam.
Step 4: Add sugar and ginger
Once the beans are soft, stir in the sugar and adjust the amount to your taste. Add the sliced ginger and cook for another 5 minutes to infuse its aroma.
Step 5: Finish and serve
Turn off the heat and let the dessert cool down. It can be served hot or cold, with ice if desired.
For a thicker consistency, mix 1 teaspoon of arrowroot starch with water and slowly pour it into the pot, stirring continuously.

Tips for Faster Cooking and Softer Beans
Roasting the beans before cooking helps them soften quicker and adds a unique aroma.
A pressure cooker saves significant time compared to a regular pot.
For a creamier texture, add 100ml of coconut milk toward the end of cooking.
Note:
Keep an eye on the water level during cooking to prevent it from drying out, especially when using a regular pot.
The black bean dessert can be stored in the refrigerator for 2-3 days. Reheat before serving.
Enjoy your delicious and nutritious black bean dessert!
