Ingredients
– Pig’s ears: 2 pieces
– Vinegar, garlic, chili, sugar, fish sauce, onion, lime

Instructions
Step 1: Clean the pig’s ears by rinsing them with salt and vinegar to remove any unpleasant odors.

Boil water with a splash of vinegar, and blanch the pig’s ears. Once the water boils, remove the ears and plunge them into cold water to cook thoroughly. For enhanced flavor and whiteness, add some lemongrass, onion, and lime juice while boiling.
Once cooked, transfer the ears to a pot of boiled water that has been allowed to cool.
Step 2: Prepare the pickling liquid by mixing vinegar, sugar, fish sauce, and soy sauce to taste. Aim for a balance similar to the beef tendon marinade described above, and heat the mixture until warm.

Step 3: Once the pickling liquid and pig’s ears have cooled, place the whole ears, chili, and garlic into a glass jar. Pour in the pickling liquid to completely submerge the meat. After about 5 days, your delicious pickled pig’s ears will be ready to enjoy.

Note: You can also slice the pig’s ears into moderately thin pieces and then place them in the jar for pickling. With this method, you only need to wait overnight before indulging in this tasty treat.
