- 500g (about 2 pigeons)
- 200g of pork belly
- 5g of dried wood ear mushrooms
- 1 handful of glass noodles
- 1 carrot
- 1/2 a sweet potato
- 1/2 a cassava root
- 1/2 an onion
- 1 bunch of coriander
- 2-3 egg yolks
- 2-3 shallots
- Cooking oil
- Seasonings: salt, sugar, fish sauce, ground pepper

2 How to Make Pigeon Spring Rolls
Step 1 Prepare the Ingredients
Clean and mince the pigeon meat after purchasing it. The head, wings, and feet can be reserved for making soup or porridge.
Soak the mushrooms and glass noodles in water until they expand, then rinse and chop finely. Peel and thinly slice the carrot, sweet potato, cassava, and onion. Squeeze out excess water from the cassava to ensure crispier spring rolls. Remove the roots from the coriander and shallots, clean them, and chop them finely.

Step 2 Mix the Filling
In a bowl, combine the minced pigeon meat, ground pork, a tablespoon of cooking oil, a teaspoon each of seasoning powder and salt, a teaspoon of fish sauce, and two teaspoons of ground pepper. Mix well to incorporate the flavors. Finally, add the chopped vegetables, mushrooms, and glass noodles and mix again.

Step 3 Wrap the Spring Rolls
Before wrapping the spring rolls, add the egg yolks and mix once more. Avoid adding the eggs too early, as it may cause the filling to become watery. Lay out the spring roll wrappers, dampen them slightly to soften, and place a moderate amount of filling in each wrapper, rolling them tightly. Be gentle to prevent tearing the wrappers. Continue until all the filling is used.

Step 4 Fry the Spring Rolls
Heat oil in a pan or pot. Fry the spring rolls in batches until they are lightly golden, then remove and drain the excess oil. Heat the oil again and fry the spring rolls a second time for crispiness and an even golden color. Remove and drain on a paper towel.
