How to Make a Crisp and White Banana Blossom and Pig Ear Salad
Step 1: Prepare the ingredients
For the pig ear, use a knife to scrape off any remaining hair and clean the inside of the ear. Then, use a mixture of lime and salt to scrub the ear clean. Soak the ear in vinegar or rice wine for about 10-15 minutes to eliminate any unpleasant odors.
If you purchased pre-cut banana blossom, simply soak it in salted lime water. If you have a whole banana blossom, peel away the outer layers and thinly slice the blossom. Immediately soak the sliced blossom in a basin of salted lime water to prevent discoloration.
Wash and grate the carrot. Rinse the herbs in salted water, and finely chop the onion.
Step 2: Boil the pig ear
Place the pig ear in a pot and cover with water. Add a teaspoon of seasoning powder and bring to a boil. After boiling, remove the ear and soak it in ice water for about 15 minutes to ensure it is crisp and white. Then, remove the ear from the water, pat it dry, and slice it into thin strips.
Step 3: Prepare the dressing
Mix 3 teaspoons of fish sauce, 5 teaspoons of sugar, 5 teaspoons of lime juice, and the chopped garlic and chillies. Adjust the seasoning to suit your taste.
Step 4: Mix the salad
Combine all the prepared ingredients in a bowl and pour over the dressing. Toss well to coat all the ingredients evenly. Let the salad sit for 15-20 minutes to allow the flavors to meld, and then serve it garnished with roasted peanuts, fried shallots, and sliced chillies.
