Beef Sausage: A Delicious Vietnamese Treat
Ingredients:
– 1/2 kg of premium beef fillet
– 3 tablespoons fish sauce
– 3 tablespoons cooking oil
– 4 tablespoons cold water
– 2 tablespoons tapioca starch
– 2 tablespoons cornstarch
– 1 teaspoon MSG (monosodium glutamate)
– 1 teaspoon sugar
– 1 teaspoon baking powder
– 1 teaspoon minced garlic
– 1/2 teaspoon minced ginger
– 1 teaspoon ground pepper
– 1 teaspoon seasoning powder
– 1 teaspoon chopped coriander
Instructions:

Minced Beef
– Rinse the beef and mince it finely.
– In a large bowl, combine the beef with all the spices and seasonings: garlic, MSG, sugar, ginger, seasoning powder, coriander, pepper, baking powder, fish sauce, cooking oil, cold water, tapioca starch, and cornstarch.
– Don a pair of gloves and knead the mixture until the spices and seasonings are evenly distributed.
– Place the beef mixture in the freezer. Remove it when it has a spongy and pliable texture and can be torn into pieces (not frozen solid).
– Transfer the beef mixture to a stand mixer and mix until smooth. Alternatively, you can use a blender.
– Tightly wrap the sausage mixture in banana leaves. If banana leaves are not available, plastic wrap can be used.

Steaming the Sausage
– Steam the sausage until cooked. Serve with hot sticky rice or steamed rice.
This homemade beef sausage has a unique aroma from the meat and spices, and it’s also healthier and safer than store-bought options, as it doesn’t contain any old, ground-up meat, fillers, or harmful preservatives like MSG.
