1 Ingredients for Apricot Tea
- 1kg apricots
- 1.3kg sugar
- 1g salt
- 800ml filtered water
- 25g jasmine green tea
- 1 liter of water at 80°C
- 500g ice cubes
- 5-10ml lemon/lime juice

Tip: When choosing apricots for your tea, select ripe, red apricots that are free from bruises and have smooth, shiny skin. They should be slightly soft when gently pressed and emit a subtle fragrance. Opt for apricots that are evenly round, and if they have stems, ensure the stems are fresh and green.
2 How to Make Apricot Tea
Step 1 Prepare the Ingredients
Wash the apricots thoroughly and let them air dry. Then, cut each apricot into 3-4 slices, depending on their size.

Step 2 Soak the Apricots in Sugar
In a large bowl, combine the apricots with 800g of sugar and 1-2g of salt. Mix well. Let the apricots soak for at least 4 hours to absorb the sugar and release their juices.

Step 3 Cook the Apricots
Transfer the sugared apricots to a pot and add 500ml of filtered water. Place the pot over high heat, stirring continuously until the sugar dissolves. Once the mixture comes to a boil, reduce the heat to low and continue cooking for about 20 minutes. Then, turn off the heat and let it cool down.
Next, strain the cooked apricots through a sieve to separate the apricot syrup from the solids. You can use the solids to make apricot jam if desired.

Step 4 Brew the Tea
Place 25g of jasmine green tea in a tea infuser and seal it tightly. Put the infuser in a pot and add 1 liter of water at 80°C. Cover the pot and let the tea steep for 10 minutes.
After 10 minutes, remove the tea infuser and discard it. You should now have a pot of brewed tea. Add 500g of ice cubes to the tea to help it cool down faster.

Step 5 Make Simple Syrup
In a separate pot, combine 500g of sugar and 300ml of filtered water. Heat the mixture over the stove until it comes to a boil. Do not stir the sugar water. Once it boils, turn off the heat.

Step 6 Mix the Apricot Tea
In a glass, combine 150ml of brewed tea, 50ml of apricot syrup, 20ml of simple syrup, and 5-10ml of lemon/lime juice. Stir well and add ice cubes to complete your apricot tea.

For an extra touch, you can add white tapioca pearls and a few apricot slices as garnishes. Your apricot tea is now ready to be enjoyed!
