To choose fresh and tasty octopus, look for ones with straight, untwisted tentacles.
You can find fresh octopus at traditional markets, supermarkets, and food stores nationwide.
2 How to Make Spicy Stir-Fried Octopus
Step 1 Prepare the Octopus
First, clean the octopus by placing it in a bowl with 3 tablespoons of flour and massaging it with your hands to remove the slime. Continue for about 3 minutes until the octopus softens.
Rinse the octopus 2-3 times to remove the flour, then place it in a colander to drain.
Octopus preparation process
In a pot, bring 500ml of water to a boil with 20g of crushed ginger and half an onion, cut into wedges. Cook for about 3 minutes, then turn off the heat and blanch the octopus for about 1 minute before draining it in a colander.
Step 2 Prepare the Ingredients and Make the Spicy Sauce
Finely chop 20g of ginger, cut half an onion into large dice, slice the green onion to a thickness of about 0.5 cm, and halve and deseed 1 red chili before cutting it into 0.4 cm thick strips.
Place the drained octopus in a bowl, add 1/2 tablespoon of sesame oil, and mix well. Marinate for about 5 minutes.

For the spicy sauce, in a separate bowl, combine 2 tablespoons of sugar, 2 tablespoons of Korean chili powder, 1 tablespoon of cornstarch, 1/2 teaspoon of ground pepper, and 3 tablespoons of soy sauce. Mix well.
Step 3 Stir-Fry the Octopus
In a pan, heat 2 tablespoons of cooking oil over high heat. Add the garlic, ginger, green onion, and red chili, and stir-fry for about 1 minute until fragrant.
Process of adding the spicy sauce to the octopus
Immediately add the marinated octopus and the spicy sauce, stirring well. Continue to stir-fry for about 2-3 minutes, being careful not to overcook the octopus. Keep the heat high to reduce liquid release and speed up cooking.
Adjust the seasoning to your taste, then turn off the heat and add 1/2 tablespoon of sesame oil and some toasted white sesame seeds.
Step 4 Serving
