Tips for Cooking Black Bean Dessert Quickly
Step 1: Rinse and sort through the black beans, discarding any shriveled, small, or damaged beans that float to the top. Then, soak them for about 4-6 hours (preferably overnight) with a teaspoon of salt.
Step 2: After soaking, drain the beans and rinse them again. Use a rice cooker, add water to cover the beans by about two fingers, and cook the beans. Once the pot comes to a boil, switch it to the “keep warm” setting for about 5 minutes.
Step 3: After about 15 minutes on the “keep warm” setting, switch the pot back to the “cook” setting to bring the beans to a boil again. After a few minutes, check if the beans are soft.
Step 4: Once the beans are soft, use a slotted spoon to remove them from the pot and set them aside in another container, leaving the bean cooking water in the pot.
Step 5: Add sugar to the beans and cook over low heat, stirring continuously, until the sugar is dissolved and absorbed by the beans. Then, turn off the heat.
Step 6: Return the beans to the pot of bean cooking water and add more sugar to taste. To make the dessert thicker and more aromatic, mix in some tapioca starch and vanilla extract. When serving, you can also add some fresh coconut shreds and black jelly to make the dessert more appealing.
