Mì Quảng is a beloved dish originating from the province of Quảng Nam in Central Vietnam. Its unique flavor profile has made it a favorite among many, typically cooked with pork or chicken, and sometimes even with fish or frog legs. Accompanied by fresh herbs, grilled rice paper, and its signature scant broth, this dish is a true delight. Let’s cook up a storm and bring a taste of Central Vietnam to your kitchen!

300g of rice noodles

200g of chicken breast

1 egg (or 8 quail eggs)

1 kg of fresh Mì Quảng noodles

1-2 pieces of grilled rice paper

2 tbsp of annatto oil

10g of shallots

5g of garlic

2 stalks of green onion

1 small knob of ginger

Roasted peanuts

Assorted herbs: basil, cilantro, mint, and perilla

Step 1 Prepare the Ingredients
Peel and mince the garlic and shallots. Cut the onion into wedges.

Step 2 Prepare the Chicken
Separate the chicken breast meat from the bone. Set the bone aside for the broth.

Step 3 Make the Broth
Rinse the pork and chicken bones, then blanch them in boiling water before rinsing again in cold water. In a pot, combine the bones, onion, 1/2 tsp of salt, and 1 tbsp of seasoning powder. Simmer for 30 minutes to create a flavorful broth.

Step 4 Marinate the Shrimp and Eggs
Peel and devein the shrimp, then marinate them with 1 tsp of seasoning powder and 1/2 tsp of pepper. Hard-boil the egg, peel, and cut into slices.

Step 5 Marinate the Pork Belly and Chicken
Cut the pork belly and chicken into bite-sized pieces. Marinate them with the minced garlic and shallots, 2 tbsp of fish sauce, 1.5 tbsp of seasoning powder, 1 tbsp of sugar, 1/2 tbsp of dark soy sauce, 2 tsp of turmeric powder, 1 tsp of chili powder, and 1 tsp of pepper for 15 minutes to let the flavors meld.

Step 6 Finalize the Dish
Heat 2 tbsp of annatto oil in a pan and fry the minced garlic until fragrant. Add the marinated meats and stir-fry until cooked. Pour in the broth, along with the eggs and shrimp, and simmer for an additional 20 minutes before turning off the heat.

Place the noodles in a bowl and top with the cooked meats, shrimp, and sliced eggs. Sprinkle with roasted peanuts and pour a small amount of the cooking liquid and broth over the noodles. Serve with a side of grilled rice paper, peanuts, green onions, and fresh herbs.
